Don't buy the Alfredo from the jar!!! Its tasteless, and who knows whats it it! I did a lot of research to try to get the base of Alfredo, and come to find out, REAL Alfredo is just lots of butter and Parmesan cheese, mixed with noodles. This is what most Americans think of when they think Alfredo. I tried cutting calories by using milk instead of cream and halved the butter the recipes I was looking at used.
Fettuccine Alfredo
serves 4
1/2 c butter (1 stick)
4 cloves garlic, minced*
4 oz cream cheese (1/2 block)
2 c milk
2/3 c Parmesan cheese (the REAL stuff, no powdered crap!)
salt and pepper to taste
*REMEMBER: The Tobin's are garlic freaks, decrease to 2 cloves if wanted.
1. Saute garlic in butter until soft
3. Add milk, simmer for 20 minutes until thickened
4. Add Parmesan cheese, simmer for about 5 minutes
5. Salt and pepper to taste, toss with fettuccine noodles, serve
Variations:
1. Of course, add cooked chicken, shrimp, broccoli, roasted red peppers, carrots, peas, etc!
