Meatballs are such an easy thing to put together and freeze. Cook one big batch and just pop them in the crockpot with a can of your very own spaghetti sauce, and you've got a meal!
Stuffed Meatballs
6 meals/4 main dish servings
Ingredients:
1 meal:
1 lb hamburger
1 egg
2 T milk
1/4 c bread crumbs
1 t garlic powder
1 t onion powder
1 T Italian seasoning
1/4 c Parmesan cheese
3 mozzarella sticks, cut into 8ths
6 meals:
6 lbs hamburger
6 eggs
3/4 c milk
1 1/2 bread crumbs
2 T garlic powder
2 T onion powder
heaping 1/4 c Italian seasoning
1 1/2 c Parmesan cheese
18 mozzarella sticks, cut into 8ths
Directions:
1. Mix hamburger, eggs, milk, bread crumbs, seasonings, and Parmesan cheese together thoroughly.
2. Place about 2 T of meatball and mold it around the mozzarella chunk, being sure to firmly and fully surround the cheese.
3. You can a) Pan fry them for 10 minutes, being sure to carefully turn them after 5 minutes or b) bake them at 350* for 30 minutes. I find frying them there is less mozzarella leaking from the meatball..
4. Flash freeze
5. Portion out into baggies, serve as wanted.
